Easy peasy taco Tuesday

Although it’s Wednesday I still like to call it taco Tuesday any time taco is in the picture. 

Here’s a quick week night dinner, I mean if you can’t conquer this, you may need to take a basic cooking class. It’s literally 5 ingredients. 

I introduce you taco pockets. Mmm 

FYI… I used about half of everything because it’s just two of us… But this recipe makes 8 biscuit pockets. 

Step 1: Preheat oven to 375 degrees. Brown 1 pound of ground beef. Add some water if the meat is dry. Then add a packet of taco seasoning of your choice. Add a cup of salsa of your choice. (I used the medium flavored clints salsa for some spice) stir all that up. 


Step 2: Get a baking sheet and rub it down with some olive oil. Using a can of pilsbury biscuits, place them on the baking sheet and flatten them out with your fingers like so.

 Step 3: Spoon in the mix, not a lot though because you are folding these in half. Shred some Colby Jack cheese and sprinkle on top and garnish with some cilantro if you choose.   

Step 4: Fold them in half and press the ends together making sure they are glued shut. It might get a little messy but who cares they taste the same.
  Beautiful right? 

Step 5: Pop in the oven for about 10-12 minutes until the top is a little brown. Let cool and walah!
